ASA x Salvador Collaboration | 12-Course Omakase | Tickets £195 p/p, includes welcome bubbles
ASA invites you to celebrate Bluefin Breakdown — a 12-course omakase collaboration led by Head Chef Shaulan Steenson and Head Chef Haydn Payne of Salvador, centred around a whole Bluefin tuna.
On the evening, the fish will arrive at the restaurant intact and be broken down by our team, with guests invited to watch the process unfold up close. Every part of the tuna will then be transformed into a series of dishes throughout the omakase, allowing you to experience the full character of the fish from beginning to end.
The experience begins at 8pm. Over the course of the evening, the omakase unfolds at a considered pace, showcasing the depth, richness and purity of Bluefin in many forms — from bone-rolled temaki and silky sashimi to aged otoro nigiri, alongside warm dishes such as wagyu.
Bluefin Breakdown promises an evening of exceptional produce, thoughtful cooking and genuine hospitality.
