This New Year’s Eve, ASA invites you to celebrate with Bluefin Breakdown – a 15-course omakase experience by Head Chef Shaulan Steenson, centred around a whole 200kg Bluefin tuna. The fish will arrive at the restaurant and be broken down by our team on the night, with guests able to watch the process unfold up close. Every part of the tuna will then be transformed into different courses throughout the omakase, so you’ll taste the full character of the fish from beginning to end.
The experience begins from 8.30pm. The dining room shifts into an intimate, atmospheric space – low lighting, vinyl records playing, and the first courses of the menu starting to land on the table. Across the evening, the omakase unfolds slowly, showing the depth, richness and purity of Bluefin in many forms: bone-rolled temaki, silky sashimi, aged otoro nigiri and warm dishes to share between friends.
